Bella Cucina Class with Chef Alisa (12/31/69)
We Olive Walnut Creek had the great opportunity to attend a cooking class at Drager's with Chef Alisa Barry the owner of Bella Cucina product line that we sell here in the store.
We learned so many great recipes and tips that we can't wait to share with you all. Below was one of our favorites of the night healthy, delicious and easy White Bean and Basil bruchetta. Become our friend on facebook to find more great recipes that we love.

Bruschetta is a simple Tuscan dish traditionally eaten to celebrate the early harvest of olives and the first pressing of Extra Virgin Olive Oil. Grilled or toasted thick slices of Italian bread or rubbed with fresh clove of garlic and drizzled with "Olio Nuovo" extra virgin olive oil. Bruschetta is delicious in it's simple, traditional form, but makes a delicious foundation for a variety of flavorful toppings as an antipasti or simple first course. It's the perfect way to celebrate the flavors of the seasonal market.
This simple snack can be eaten by itself or make into a meal with canned tuna over arugula greens.
6 half inch slices of ciabatta bread
1 clove of garlic
1 sixteen oz. can of Cannellini Beans (about 1 1/2 cups)
1 cup tomatoes, diced
1/3 cup red onion chopped
2 Tbs. fresh basil, torn or cut into chiffonade
1 tsp. chopped garlic
1/2 cup of We Olive Olio Nuevo Extra Virgin Olive Oil
2 Tbs. B.R. Cohn Cabernet Vinegar
1 Tbs. We Olive Aged Balsamic Vinegar
2 Tbs. Bella Cucina Sun-Dried Tomato Pesto
1 tsp. peperoncini chili flakes
2 tsp. salt
1/8 tsp. pepper
Slice the bread into 1/2 inch pieces. Toast or grill until dry. Rub with garlic clove. Set aside until ready to use. Drain Cannelloni beans and discard liquid. Core tomato and chop into coarse dice. In a medium bowl add beans, tomatoes, onions, garlic and basil.
In a separate bowl, add vinegar, pesto and chili flakes. Slowly whisk in Olio Nuevo Olive Oil until mixture is emulsified. Pour over bean mixture and toss gently just until mixed. Add salt and pepper, seasoning to taste.
Serves 6 as an antipasti.
