Steel Days is excited to announce the 1st Annual Smoke & Steel Backyard BBQ Competition! We hope to make this the premier BBQ Competition in Utah County. We invite all levels of BBQ enthusiasts to participate and experience a fun day. Please review the registration requirements and rules and indicate which categories you will compete in.

SMOKE & STEEL BACKYARD BBQ COMPETITION RULES AND INSTRUCTIONS

1. The Executive Committee and Smoke & Steel Competition Coordinators must approve all cooking entries.
2. Entry teams may have as many team members as they choose. However, for the purpose of related publicity or for awards presentations, only four (4) team members will be considered “official” team members.
3. Team booth areas will be pre-assigned and a map of the competition area will be sent to all participants prior to the event. MAX booth dimensions are 10' x 20' (more space may be requested but is limited in availability). Please plan accordingly so that all teams can be accommodated.
4. TIMELINE:

  • 8:00 a.m. - Set-up for booth and cooking equipment. Lighting of the grill is considered part of set-up and may be done at any time but fires must be lit once in position - no pre-lit fires before arrival.
  • 9:00 a.m. - Meat check-in and inspection and submission box pick-up. All meat must be raw and unseasoned at check in. Cooking may begin immediately after check-in.
  • 11:00 a.m. - Mandatory Team Captain meeting at the Judge's Tent. We will review the schedule of events and rules and answer any questions from the Team Captains during this time.
  • 3:00 p.m. - Meat submission and judging begins. Submissions will be accepted 5 minutes before and 5 minutes after stated time. Boxes will not be accepted and will be turned away after that time frame.
    • 3:00 p.m. - Chicken turn-in
    • 3:30 p.m. - Ribs turn-in
  • 5:30 p.m. - Awards Ceremony

5. AWARDS:

  • Prizes will be awarded for 5th, 4th, 3rd, 2nd, and 1st place in each category (Chicken, Ribs, and Grand Champion).
  • Prizes from ThermoWorks will be awarded to 1st, 2nd, and 3rd place winners in each category (Chicken, Ribs, and Grand Champion). 
  • Cash prizes will be awarded to Grand Champion and Reserve Grand Champion.

6. All meats must be prepared on-site and will be judged on taste, tenderness, and appearance.
7. Categories for 2019 Smoke & Steel BBQ Competition are as follows:

  • Ribs - Pork Bone-in: 6 servings. Pork ribs must be cut apart.
  • Chicken: 6 servings. Any part of the chicken may be submitted, but it must fit in the box. NO CORNISH GAME HENS.
8. Meat must be submitted in the box provided during check-in. It may be placed on a foil square but do not fold foil over meat or mark the foil in any manner. Folding or marking of foil or the box is not allowed and can result in disqualification. Garnishes are not allowed in the turn in box - NO garnishing or markers allowed.
9. All decisions of the judges will be final.
10. FREE SAMPLES TO THE CROWD are encouraged. However, contestants and/or sponsors may not sell food, drink, souvenirs, or other items to the public. ANY AND ALL SALES ARE PROHIBITED. NO FOOD CAN BE SOLD at the event and any attempt constitutes disqualification from the event.
11. City regulations prohibit public consumption of alcoholic beverages.
12. Teams, Participants, and Contestants in the Smoke & Steel Backyard BBQ Competition are responsible for the CLEAN UP of their area immediately following the contest. Each team is responsible for keeping the contest area clean and policed before leaving event (ashes, hot or cold, shall not be left on site). Trash cans and bags will be provided during event. Additional trash bags available upon request.
13. Utilities (water and electricity ONLY) are limited in availability and MAY NOT be available. Use your Registration Form to indicate if you need electricity.
14. Up to two (2) vehicles are permitted in the contest area for set up purposes only. After set up, all vehicles must be moved to the parking area. Enclosed Trailers must be removed from cooking site (unless your cooker is permanently attached).
15. Cooking equipment may be moved to a side street for vehicle pick up after cooking. NO VEHICLES WILL BE ALLOWED IN THE COOKING AREA to remove items because of safety concerns for pedestrian traffic.
16. Each cooking team will be required to have a fire extinguisher (A,B,C) in full view at all times.
17. Cleanliness of all team members, cookers, and the cooking area is mandatory. Proper hand washing and the use of disposable food-safe gloves shall be used at all times when handling food products - raw or cooked. Gloves should be changed often, especially when working with different products and when handling ready-to-eat foods after handling raw foods.
18. Absolutely no tobacco products are allowed during the preparation, handling, cooking, or presentation of the contest entries.
19. Clothing, including but not limited to shirts and shoes, must be worn in all food preparation areas while handling any food.
20. All traffic lanes in contest area must be kept open.
21. Once a team’s entry fee is received, there are NO REFUNDS of any kind, in any amount, for any reason, in any time frame. Entries will be processed on a first paid basis.
22. No pets or small animals are allowed in cooking area.
23. No political advertisements/signs/etc. are allowed in cooking area.
24. We will try to make your contest experience as enjoyable and fair as it can be. Without your participation, we have no event. Maximize your enjoyment with the intent to return next and subsequent years!

26. Smoke & Steel Backyard BBQ Competition personnel reserve the right to amend these rules and regulations as situations warrant. Intent to circumvent these rules or amendments will not be tolerated.
